Low carb blueberry muffins

The problem with recipe blogs is you’re very likely to slip into a diabetic coma and die while trying to find the recipe. Nevermind the twenty-five page George R R Martin style epic hero’s journey. How many eggs do I need?? With that said, here is the recipe. 

Ingredients (6 muffins):

  • 4 medium-sized eggs
  • 110g butter
  • 75g coconut flour
  • 25g corn starch
  • 100g blueberries
  • 25g erythritol (or other artificial sweetener)
  • 125ml water
  • 5g baking soda (1 tsp)
  • Pinch of salt

I’ve done the math for you. One muffin has 250 kcal with 8.5g carbs, 6.5g protein and 20g fat. A full ingredient list breakdown can be found at the bottom of the page.

If you want extra protein you can add a tablespoon or two of protein powder, and take out a little bit of the coconut flour. 

You can make low carb chocolate muffins by swapping out the blueberries for cacao and dark chocolate. Or use vanilla and walnuts. Anything your heart desires.

Steps to make:

  1. Whisk the eggs lightly in a large bowl. Mix the erythritol in 125ml of water. Add to eggs.
  2. Melt the butter and add to egg mix (make sure it’s cooled down before adding or you’ll scramble the eggs).
  3. Mix together all the dry ingredients in another bowl and turn into the egg mix. Stir until no lumps.
  4. Add blueberries.
  5. Spoon the mixture into a muffin tray.
  6. Bake in the middle of the oven on gas mark 6 (200 degrees C) for 10-15 min.

Some observations:

  • Low carb baking is more of a chemistry lesson with typical ingredients such as nut flower, protein powder, psyllium husk and xantan gum.
  • Coconut flour works well in sweet cakes and muffins. I’ve tried to use it for wraps and bread which has turned out pretty tragic so far. Good challenge for the future.
  • Corn starch is pure carbohydrate, so make sure to weigh it. The more you add, the better the consistency of your muffins will be.
  • Erythritol is a good sweetener for baking. Don’t ever try to use it in hot chocolate.
